For East Midlands, I'd recommend A57 Snake Pass - Sheffield to Glossop.
Lovely bit of road, lovely scenery
Bit further south Cat n Fiddle is another obvious one

Snake pass is coppered quite often so becareful on that one!!!

Another good road, nice and wide, fast too is the A53 from Shrewsbury to Stoke on Trent, twisties and straights ,  not particularly coppered , still always good to keep an eye out

I also live south Birmingham when I am there anyway

Like stated, head towards Evesham from Redditch but go via Headless Cross, the A/B roads are better, then up towards Broadway (Fish Hill) then keep going south, Morton, Burford A361 to Lechlade route, you could end up in Bournemouth and not touch a motorway until the M27,  or just go as far as HIghworth, turn around and go back the way you came!

Good roads too if you catch them at the right time.
